A satisfying lunch bowl with incredible texture
Ingredients:
- 2 cups cooked quinoa (cooled)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, finely chopped

- ½ cup crumbled feta cheese
- Fresh parsley, chopped
- ¼ cup kalamata olives, sliced
Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Combine quinoa, vegetables, olives, and herbs in a large bowl
- Whisk together dressing ingredients
- Pour dressing over salad and toss well
