Crunchy Mediterranean Quinoa Salad

A satisfying lunch bowl with incredible texture
Ingredients:

  • 2 cups cooked quinoa (cooled)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, finely chopped
  • ¼ cup EarthToYou Roasted Pumpkin Seeds
  • ½ cup crumbled feta cheese
  • Fresh parsley, chopped
  • ¼ cup kalamata olives, sliced

Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
    Instructions:
  1. Combine quinoa, vegetables, olives, and herbs in a large bowl
  2. Whisk together dressing ingredients
  3. Pour dressing over salad and toss well

  5. Add feta cheese and serve chilled
